Ecolab introduces SaniSave®, a cleaner-sanitizer that
simplifies cleaning and sanitizing of food preparation surfaces and
equipment, including deli slicers, scales and meat display cases. With
SaniSave, food retail employees can now clean and sanitize with one
product, eliminating the need to mix, collect and transport three
separate containers to stationary devices and surfaces.
Research shows that the new SaniSave® Program, which consists
of SaniSave no rinse cleaner-sanitizer, training materials and
proprietary dispensing technology, cleans better and takes less time to
complete than a standard wash-rinse-sanitize regimen. SaniSave is both a
“food contact” and “non-food contact” cleaner-sanitizer, and
EPA-registered against Klebsiella pneumoniae, Staphylococcus aureus,
Escherichia coli and Listeria monocytogenes. SaniSave reduces the
complexity of the industry-standard wash-rinse-sanitize protocol.
“Retailers know the four-hour wash-rinse-sanitize procedure for deli
slicers mandated by the Food Code is a challenge,” said Tom Ford, vice
president of Food Safety, Ecolab Global Food Retail. “SaniSave
simplifies the required process by combining cleaning and sanitizing
into one product that eliminates the rinse step.”
With SaniSave, a deli employee simply sprays cleaner-sanitizer on a food
contact surface, wipes it off, sprays again, and allows the surface to
remain wet for 60 seconds. The surface can be allowed to air dry or
wiped clean before re-use.
“The simplified process has paid off for stores that have partnered with
us in developing SaniSave,” said Ford. Field research conducted using
100 deli slicer swab sites showed significantly improved cleaning at a
microbiological level. After a three-week period on the SaniSave
Program, the percentage of “in spec” swab samples increased by 83
percent.
