IT BBQ Time snow or no snow
THE INGREDIENTS YOU'LL NEED:
- Sirloin Steak – 2 – (2 ½ - 3 lbs each, 1 ½” thick)
- Onion – 1, white – medium size
- Mushrooms – 1 cup sliced
- Salt – to taste
- Pepper – to taste
- Butter – 1 stick
- Garlic Bread– 4-5 pcs.
FOR MARINADE:
- Extra Virgin Olive Oil – ½ cup
- Soy Sauce – ½ cup
- Worcestershire – 2 Tablespoons
- Louisiana Hot Sauce – 2 Tablespoons
- SPG – 1 Tablespoon
- Red Pepper Flakes – to taste, crushed
- Garlic – 3 cloves, crushed
STEAK SAUCE AU JUS:
- Onion – 1/8 cup, chopped
- Butter – 2 Tablespoons
- Garlic – 1 clove, chopped
- Beef Stock – ½ cup
DIRECTIONS:
MARINADE STEAK:
1. Combine marinade ingredients in a bowl. Mix well.
2. Place one steak in a container or zip lock baggie.
3. Pour marinade over the steak and marinade for 1-3 hours.
4. If you want to marinade both steaks, increase ingredients.
GETTING READY
5. Bring grill temperature up to 400 - 450 degrees Fahrenheit.
6. Cut onion into ¼” – ½” pieces.
7. Slice 1-2 cups of mushrooms.
MAKING
8. Remove steak from marinade and place directly over coals to sear.
9. Add oil and SPG to each side of other steak if you chose not to marinate.
10. Place steaks directly over hot coals for 2-3 minutes to sear.
11. Turn and sear other side for 2-3 minutes.
12. Move steaks opposite coals for indirect cooking. Cover and cook additional 4-5 minutes for a medium-rare steak, or until desired temperature is reached.
SAUT ONIONS AND MUSHROOMS:
13. Melt 3-4 Tablespoons of butter in skillet.
14. Put onions and mushrooms in skillet to saut.
15. Cook until desired doneness. Set aside until steaks finish cooking.
STEAK SAUCE AU JUS:
16. Place ingredients in a pan on grill over direct heat.
17. Bring to a simmer then remove to indirect heat while steaks finish cooking.
18. Cover grill and let cook another 3-4 minutes.
FINALIZING
19. Remove steak from grill and put on a cutting board. Let rest 5-8 minutes so juices redistribute.
20. Place garlic toast on grill to toast.
21. Place steak on serving platters. Top each steak with 1 – 1 ½ tablespoons of butter.
22. Cover with sauted onions and mushrooms.
