When Tergesson, the BU president, was on BNN a while back, he stated that BU has material transfer agreements (MTA's) with four of the five worlds largest food and beverage companies, although due to confidentiality agreements would not specifically name the four. Yes, they are working with some big names.

As to BXI, they seem to be working exclusively with Helm AG, which is not the end user, and will distribute the product to food cos. It is unclear to me  who their customers will be. It does seem odd, though, that they do not seek GRAS notification.

The patents are not necessarily required to produce, but are smart protection of your unique processes and products.
