RE: An experimentI don't think I follow the logic of your experiment.  If there were other people wishing to buy at .03, their orders would be filled before any more .025 were filled.    As long as somebody is willing to sell at .025, and somebody is willing to buy at .025, the price will go back to .025 if nobody is offering higher.  All you have shown is that there are no other offers to purchase at a higher price.
