I sent an email to Ithaca a got the following answers from Nick Muir the next day.

1) Does the Athena FPSO process oil while Betty Knutsen is attached to the tanker offloading buoy?
Yes, the FPSO processes oil continuously and stores it on board. The tanker attaches to the FPSO directly via a flexible offloading hose. It takes approximately 5 offloads to fill the tanker ready for a trip to the Nigg terminal.  The tanker usually comes in to sheltered waters in between offloads.
2) Does every Betty Knutsen offload at Nigg contain 250,000 bbls of oil?
A full load contains approximately 250,000 barrels. The actual volume is usually a little less than this.
