2.1. Proteins
Canola proteins from Brassica juncea were produced by BioExx Specialty Proteins LTD (Toronto, Canada) obtained from Helm AG (Hamburg, Germany). Using a patented method involving cold temperature extraction procedure, valuable soluble proteins are retained and not denatured as would be the case with standard rapeseed processing. Defatted rapeseed meal extracted from the pressed seed cake contains proteins and carbohydrates as well as fiber and protein residues. Canola protein isolate (CPI) is produced by purifying the soluble proteins through membrane processing, while the canola protein hydrolyzate (CPH) is separated from fiber and protein residues by enzymatic hydrolysis
