Great question; first off this was the main reason i invested in DOJA now a part of HIKU brands. In simple terms its a higher quality product . Craft vs pharma grade is no contest . "Craft" is what avid smokers will seekout and pay extra for.
Pharmaceutical grade would be greenhouse hybrid -large scale/mass produced . LED lighting combined with natural sunlight ..ie -ApH ..
Craft cannabis would be the type of high end product you would see on the black market "the good stuff" ...medical pharma grade is such,for medical use .either dry flower or extracts and oils...its a lower cost to produce and higher yield per sq ft -but usually lower % thc (due to higher yielding strains used) and less trichomes due to auto trim.(some fall off)...
A few more differences "craft vs pharma grade
1-strains - mostly indicas *used in craft* more potent** as opposed to a sativa or even sativa/indica hybrid ...Higher potency strains yield less- **and the goal of greenhouse hybrids (pharma grade) is to mass produce so higher yielding strains are commonly used.they sacrifice quality for quantity but have much lower production costs.
2- small batch production for craft-controlled environment much easier to control moisture and pests etc which indicas are not as resilient as a sativa..also C02 can be used in smaller rooms for bud density.
3- hang dried product-hang dried (craft)vs rack/screen dried (mass scale greenhouse )imo is a huge difference.the slow dry process allows for a smoother tasting less harsh final product...important transformations are taking place within the bud and speeding up this process will result in a inferior product.
4- handtrimmed- craft buds are handtrimmed final product - this is "curb" appeal ..making the buds look their best ...its not only about looks its also about handling the buds with care ---mass production facilities use auto trimming machines which can knock off trichomes...
In addition higher quality product means highest margins possible for dry flower. The blackmarket expects this .
Craft: to sum up basically means more patience, care, and attention to detail during the process of growing and curing.

Mass produced pharma grade--(greenhouse scale grow)-would be like Smirnoff
Craft- grey goose
Wine -im not too up on my wines but ill give it a shot lol--
Greenhouse grown pharma grade - is like box wine - or pinot nior
Craft DOJA- Cabernet Sauvignon
