Market Potential: Primary research and development is focused on developing product for the wine, fortified - and distilled - spirits yeast market. It is estimated that these global markets use in excess of 35,750 metric tons of yeast annually. Current prices, depending on the specific strain of yeast, are in the range of US$20 per kilogram for basic yeasts, up to US$140 for specialty yeasts in wine and brewed or distilled beverages (note: there are approximately 903 kilograms in a ton).
Commercial Ready Product: It is anticipated that a commercial product will be ready by the first half of 2006. This is subject to variability in the final research and development phase. The technology has been under development for more than 4 years and the projected schedule is based on a previously engineered yeast technology that the research team has successfully completed.
