Ed Carrella, former general manager of Mason Street Grill, has been promoted to corporate director of restaurants for Marcus Hotels & Resorts. In his new position, he will oversee day-to-day operations of all food and beverage outlets throughout the company’s 18-hotel portfolio, with a focus on the popular ChopHouse and Miller Time Pub & Grill brands as well as Mason Street Grill in Milwaukee. In addition, he will assist in budgeting and menu conception.

During his three years as general manager of Mason Street Grill, he was responsible for increasing revenues by 10% and increasing profits by 50%. Carrella was born and raised in Chicago, Ill., where his family owned and operated a south-side Italian pizzeria. Growing up in the restaurant industry, his career highlights include working for primary establishments in Chicago, including serving as general manager of Sullivan’s Steakhouse, assistant general manager of Grand Lux Café, director of restaurant operations at House of Blues and assistant general manager of Lettuce Entertain You Enterprises.

“We are thrilled to promote Ed to corporate director of restaurants. His extensive background in restaurants, knowledge of food and beverage and his commitment to quality and training will help him to be very effective in his new role,” said Peggy Williams-Smith, corporate vice president of food and beverage for Marcus Hotels & Resorts.

Marcus Hotels & Resorts also announced that Eric Grimm has been appointed the new general manager of Mason Street Grill and Cristina Gliatis will serve as assistant general manager of the restaurant.

Grimm joins Marcus Hotels & Resorts with an extensive background in food and beverage, most recently serving as assistant general manager of Coopers Hawk Winery and Restaurant in Brookfield, Wis. In this role he was responsible for all front-of-restaurant operations and day-to-day management. Previously, he worked at T & J Hospitality Group in Tomah, Wis., where he was responsible for overseeing the food and beverage operations for Three Bears Lodge and the opening of two independent pizzerias, where he doubled sales in a 12-month period. Grimm has also served in management positions at Stir Crazy Fresh Asian Grill, Ruby Tuesday Restaurant and Papa Murphy’s Pizza.

Cristina Gliatis most recently served as manager of Brisco County Wood Grill in Menomonee Falls, Wis., where she was responsible for overseeing marketing, sales, events and day-to-day management of a staff of 30. She began her food and beverage career with MGM Resorts in 1999 and assisted with the opening of Beau Rivage Resort & Casino in Biloxi, Miss. She then went on to serve in various positions with Wynn Resorts and The Light Group/Mirage & Bellagio in Las Vegas. Most recently, she served as general manager of Nove Italiano in Las Vegas as part of N9NE Group at the Palms Casino Resort.

“Both Eric and Cristina have a passion for creating a positive guest experience and have excellent managerial and operational skills. I am confident they will continue to foster a high-quality dining experience for our guests and further enhance Mason Street Grill’s reputation as one of Milwaukee’s finest dining establishments,” added Williams-Smith.
