Read a book or a peer reviewed article, such as the one below; the animals you speak of are single or multi Celled organisms. Also, your argument completely lacks logic: just because elephants require substantial vegetation, does not ipso facto mean that substantial vegetation did indeed exist simply because there were elephants at one time. Although the point is moot because vegetation turns into coal, not oil and gas (see link below)
